Also, Haikou noodle, one variety of Hainan noodles, tops from the view of taste. This snack is a must-have valuable matter for celebrating festivals which symbolizes longevity and auspiciousness. Hainan noodle is divided into thin noodle and thick noodle: thin noodle is cooked with simple seasonings which just need to be poured into the Chinese sauerkraut soup with beef and added several seasonings as shrimp sauce, tender pepper, minced scallions and deep-fried peanuts. Compared with thin Hainan noodle, thick noodle is more complicated in the term of seasoning and cooking methods that is meant to be marinated by cornstarch sauce to raise the flavor into a brand new level.
