Featuring mild, delicious, fragrant and crispy, Xiamen food pays a special attention to the combination between delicacies and soup or sauce as the same as the most of the southeastern coastal region in China, which draws neck and neck with Guangzhou food. It is no use to explain why the seafood here is so charming in such a sea-front city: for instant, stewed duck with ginger, a signature dish of Xiamen, is added scores of herbal medicines which makes a top-grade nourishing soup. In addition to fine dishes, some local snacks such as bamboo shoot curd, satay noodle and peanut soup represent the taste of the area.

The core of Xiamen food is the four kinds of seafood: crab, prawn, fish and cowry. In heritage of Min cuisine, Xiamen fine food manages to absorb superior advantages of the rest regional cuisine and give up the disadvantages of greasy taste and crudely cooking to recreate up to thousands of dishes charactering fresh, mild, original and not spicy. As a regular winner in the cooking contests, Xiamen food receives plenty of reputations given by culinary universe.

As a significant snack and shopping street, Dragon Head Road is densely packed with restaurants, street food stalls and shopping stores. It is easy to find out “The Four Famous Snacks” in the street which includes: Mazi, fish ball, dried stewed-meat and meat-stuffed pie. Mazi is offered by a food cart which is only traditional brand franchised to sell Mazi to the corner of the food street while the rest three at least run simple stalls. But there is no reason to not fall in love with the tasty snack. A couple is running the Mazi business, and the husband is in charge of creating the fabulous food impeccably: cut the glutinous rice ball slightly and stuff the ball with a profusion of sugar and smashed peanuts, then make the mixture a ball again and roll it in the black sesame. When Mazi comes to your hand, it will appear a black ball and smell really fragrant.
