However, the most wide-known restaurant specializing in donkey meat yellow noodle is Djia Restaurant.
Saozi Noodle
Saozi noodle is processed with wheat flour by hand. Mixed the flour with water, and roll the flour until evenly thin. It is ready to be eaten with adding the prepared soup after slice the paste and boil it down. For the shape of one string of the noodle is quite uniformly slim like the leaf of fragrant-flowered garlic, a bowl of this satisfy the hungry stomach immediately, no mention to the appetizing noodle soup going with.
Sour Soup Noodle
The third wonder among Eight Dunhuang’s Odd Foods is sour soup noodle. The major ingredient of sour soup is celery or arrow-shaft cabbage mingling with sour soup ferment for over three days in a warm place. When the mixture goes sour without strange flavor, it will be the perfect time to try this palatable sour soup which is ensured to be distinguished for your body.
Niang Pi
Niang pi in Dunhuang is translucent, yellow sheet jelly seasoned by home-made sauce, some of them even appearing like white jade, which leaves taste sour and spicy. Meanwhile, the convenience of the way to eat makes Niang pi very popular in the grassroots.
Bubble Oil Cake
Bubble oil cake is named after its fluffy surface attached with a pack of crystal mini bubbles, which is created by Dunhuang Hotel according to the orthodox methods. Light, crispy like floss outside and sweet like sugar inside, this specialty tends to be the most favorite food seduced natives and foreigners alike.
